I usually make granola bars for the kids in the mornings for breakfast. Yesterday I used a different brand of coconut oil and the conversation went like this:
Grace -“These taste different. Did you change them?”
Me – “Nope. I used the same ingredients I always do.”
(True statement! Who notices brand anyway?!?)
Samuel – “I knew they were different. They don’t taste different, they just look different.”
(WHAT?!?)
Grace- “Mom, did you make these this morning?”
Me – “Yes!”
Grace – “Were you tired?”
I guess we’ll go back to the other brand of coconut oil…
Apparently I change too much stuff in my recipes to try to make them healthier. My kids obviously notice! But this is one thing that Samuel and Grace BOTH like and agree on, and it’s a super easy breakfast.
No, it’s not ketogenic or paleo or gluten free. But it’s a whole lot healthier and cheaper than the pre-packaged granola bars. And it’s a life-saver for my mornings as far as breakfast is concerned!
Here’s my recipe:
¼ cup coconut oil
1/3 cup honey
vanilla
3 cups quick oats
mini chocolate chips
Heat the coconut oil, honey and vanilla until melted. Pour over oats and mix until combined. Add chocolate chips. Press very firmly into a 9×13 pan and put in the fridge overnight. Super easy. Super yummy!
